Balsamic Grilled Lamb Chops

  • 6-8 1″ loin lamb chops
  • 1/3 cup Di Olivas Blackberry Ginger Balsamic
  • 3T Di Olivas Extra Virgin Olive Oil
  • 2t dry mustard
  • 1T minced garlic
  • 2-4 sprigs fresh rosemary
  • 1 medium onion (preferably Vidalia), chopped fine


  1. Whisk together balsamic, olive oil, mustard and garlic. Stir in onion. Place lamb chops in a ziploc bag, pour marinate over and add rosemary. Marinate, refrigerated, 4-8 hours. Remove lamb chops and grill to desired temperature. While grilling lamb, pour marinate mixture into a small pan, removing rosemary. Bring to a boil, reduce heat and reduce, stirring frequently, to 1/2. Should be a “jam” like consistancy. Spoon over grilled lamb chops.
